Green Melchiora dumplings

Dough ingredients:

  • 200 g flour
  • 120 g butter
  • 1 tablespoon sour cream
  • 2 egg yolks
  • pinch of salt

Ingredients for filling:

  • 200 g Grikios salad cheese
  • 1 teaspoon curry 
  • pinch of pepper and dried dill
  • 2 handfuls defrosted spinach
  • 3 cloves of garlic
  • 1 teaspoon butter
  • pinch of salt and pepper
  • 1 egg white
  • dried dill


Knead the ingredients for the dough, wrap it with food wrap and cool for 30 minutes. Chop the garlic and fry it in butter, add the spinach and keep frying a few minutes. Add the spices and Grikios cheese, mix and leave on a low heat for 2 minutes. Cool it down. Roll the dough thinly and cut circles out of it. Put small portions of the filling on them, fold over to join the edges of each circle and press down with a fork. Put the dumplings on a sheet of baking paper, brush with the egg white, and sprinkle gently with the dill. Bake them at 170°C until they turn golden brown. Serve with garlic sauce.
