Leek cream soup


  • 1 medium onion
  • 1 clove of garlic
  • 1 large or 2 small leeks
  • olive oil
  • 400 ml water
  • cheese spread
  • salt and pepper to taste
  • Grikios feta-type cheese
  • slices of toast


Fry the finely sliced onions and pressed garlic in the olive oil. Add a fine cut leek and stew for about 10 minutes. Add water and cook for 15 minutes. Finally, add the cheese spread and wait until it melts. Blend everything and season to taste. This soup is best served with feta-type cheese. The sweetness of the leek and the salty cheese make a perfect blend.
