Grikios halloumi-type cheese and avocado baguette


  • 200 g Grikios grill cheese
  • two handfuls of rocket
  • a dozen or so cherry tomatoes
  • 1 ripe mango
  • chives
  • sweet chilli sauce
  • salt


Wash and dry the rocket and tomatoes Cut the tomatoes in half and place them on plates together with the rocket. Add salt. Peel the mango and cut it into medium-sized pieces. Add to the rocket and tomatoes.

Cut the halloumi cheese into slices of about 2 cm and grill them for 2–3 minutes on a dry, well-heated grill pan. As soon as dark bars appear on the cheese, turn it over and grill the other side.

Place the grilled cheese on the plates and cover everything with the sweet chilli sauce. Sprinkle with chives before serving.
